The Sun-Dried Tomato Pasta I Make When I’m Officially Over Cooking

Cooking dinner has been pretty low on my priority list lately. When making a meal starts to feel more like a task than something enjoyable, I know it’s time to switch things up with recipes that are simple, flavorful, and satisfying enough to make even an ordinary Wednesday night feel special.

Enter this sun-dried tomato caper pasta.

This is the kind of recipe I turn to when I want something comforting and delicious without spending hours in the kitchen. It’s packed with bold flavors from sun-dried tomatoes, garlic, capers, and Parmesan, creating a pasta dish that feels elevated while still being incredibly easy to make.

As someone who usually focuses a lot on getting enough protein throughout the day, sometimes the best way to break out of a food rut is to simply enjoy something different. Call it “girl dinner” or whatever you like—this recipe proves that a simple bowl of spaghetti can feel completely exciting again.

Ingredients for Sun-Dried Tomato Pasta

The ingredient list is straightforward, but every component adds something important. Each flavor works together to create a sauce that’s rich, balanced, and completely addictive.

Pasta

I love using spaghetti or bucatini for this recipe, but any pasta shape you enjoy will work beautifully.

Sun-Dried Tomatoes

Choose sun-dried tomatoes packed in oil. The tomatoes bring concentrated sweetness and tang, while the oil adds even more depth and flavor to the sauce.

Shallots

Thinly sliced shallots add a subtle sweetness and a delicate onion flavor.

Tomato Paste

A little tomato paste adds incredible umami and helps create a deeper, richer sauce.

Garlic

Use as much garlic as your heart tells you. This recipe can handle it.

Capers

Roughly chopped capers add a salty, tangy bite that makes the entire dish come alive.

Heavy Cream

A splash of cream balances the bold flavors and adds a smooth, luxurious texture. You can substitute plant-based milk if needed.

Parmesan

A small amount of freshly grated Parmesan adds saltiness and a delicious cheesy finish.

Fresh Basil

A handful of basil brightens the dish and adds the perfect fresh note at the end.

A Few Tips for the Best Sun-Dried Tomato Pasta

Even though this pasta comes together easily, a few small techniques make a big difference.

Cook the tomato paste until it deepens in color.
Adding the tomato paste with the shallots and letting it cook for a few minutes helps caramelize the flavors and removes the sharpness of raw tomato paste.

Bring the cream to room temperature.
Let your cream sit out while you prepare the ingredients, and lower the heat before adding it to the pan. Adding cold cream to a very hot pan can cause the sauce to separate, so this simple step helps keep everything smooth.

Always save your pasta water.
That starchy cooking water is the secret to bringing the sauce together and helping it cling beautifully to every strand of pasta. Don’t drain your noodles without saving a little first.

What to Serve With Sun-Dried Tomato Caper Pasta

This pasta is delicious all on its own, but it also pairs wonderfully with fresh salads and simple sides. If you’re turning it into a full dinner, these are some of my favorite combinations:

Broccoli Caesar Salad

The bright, tangy dressing pairs perfectly with the rich, savory flavors of the pasta.

Green Salad With Sesame Dressing

Light, fresh, and crisp, this salad brings balance to a cozy pasta dinner.

Halloumi Salad With Shallot Vinaigrette

A flavorful vegetarian side with extra protein that complements the pasta beautifully.

An easy weeknight pasta recipe featuring sun-dried tomatoes, garlic, capers, Parmesan, and a creamy sauce. Simple ingredients come together to create a flavorful dinner that feels special without the extra effort.

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Serves: 2

Ingredients

  • 2 servings pasta of choice
  • 2–3 tablespoons oil from the jar of sun-dried tomatoes
  • 1 large shallot, thinly sliced
  • 3 tablespoons tomato paste
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 5–6 sun-dried tomatoes, finely chopped
  • 3 large garlic cloves, finely chopped
  • 2 heaping tablespoons capers, roughly chopped
  • 1/4 cup heavy cream
  • 1 tablespoon grated Parmesan
  • Fresh basil, for serving

Instructions

1. Cook the Pasta

Prepare the pasta according to the package instructions. Before draining, reserve some pasta water for the sauce.

2. Build the Sauce

Heat the oil from the sun-dried tomato jar in a large skillet over medium heat.

Add the sliced shallot with a generous pinch of salt and cook for about 2 minutes, until softened.

Add the tomato paste and red pepper flakes. Cook, stirring occasionally, until the tomato paste darkens slightly and becomes more fragrant.

Add the chopped sun-dried tomatoes, garlic, and capers. Stir everything together and cook for another minute to allow the flavors to combine.

Reduce the heat, then add the cream and Parmesan. Stir until the sauce becomes smooth and creamy.

3. Combine Everything

Add the cooked pasta to the pan along with a splash of reserved pasta water. Toss everything together until the sauce becomes silky and coats the noodles evenly.

Serve warm, topped with fresh basil and extra Parmesan if desired.

Enjoy!
